Gluten-free, dairy-free, egg-free, soy-free, grain-free unleavened sweet and savoury "sourdough" doughs can be prepared with this flour blend in minutes.

It is rich in fibre and can therefore be a valuable part of a balanced diet.

Ingredients: gluten-free flour (millet, sweet potato - sweet potato), tapioca starch, fibre blend (psyllium, bamboo fibre), raising agent (sodium bicarbonate), acidity regulator (citric acid).

Ingredients (per 10 pieces, approx. 440 g): 150 g Szafi Free Express flour mix, 70 g Szafi Reform powdered erythritol (or powdered sugar), 0.5 g salt, 10 g freshly grated organic lemon zest, 10 g apple cider vinegar (or freshly squeezed lemon juice), 140 g water, 5 g Szafi Free Express flour mix for kneading

Stuffing: 35 g Szafi Reform non-fat cocoa powder, 50 g Szafi Reform erythritol powder, 60 g water

For rubbing: 20 g of liquid apricot jam without added sugar (if thick, dilute with a little water and add sweetener to taste)

For spraying after baking: approx. 1 g of oil

Preparation: knead the dough and let it rest for 5 minutes, in the meantime prepare the filling.

We need to get a very soft, almost liquid dough - do not add more flouras it will be workable after resting.

Knead the dough on a floured board and roll out into a rectangle. Brush with thick cocoa cream and roll up from the narrower side.

Cut into 10 pieces and brush with liquid apricot jam.

Bake in a preheated oven at 160 °C, upper/lower programme 20-23 minutes (depending on the oven). Then spray with oil spray and bake for 2 more minutes.

Let cool on a wire rack and serve.
