Tonka bean (Dipteryx odorata) is an aromatic seed native to the tropical regions of South America, particularly Venezuela and the Guiana region. It is characterised by an intense and complex aroma with notes of vanilla, bitter almonds, tobacco and cloves. Thanks to its unique aroma, it is a favourite ingredient not only in gastronomy but also in the perfume industry.

It is used in very small quantities in cooking – most often grated, much like nutmeg. It is ideal for desserts, puddings, custards, ice cream, chocolate specialities, cakes and other dairy-based sweets.

Recommended use: Use in small quantities to flavour desserts, creams, chocolate, ice cream or milk-based drinks.
