Cane sugar is a natural sweetener obtained from sugarcane grown in tropical and subtropical regions. It is Renewable natural resource, as the plant is not pulled from the ground during harvest, but only its stem is cut, allowing it to regrow without the need for replanting. This method of cultivation is not only economical, but also environmentally friendly.
Cane sugar is obtained from the juice of the fleshy stalks of sugar cane without the use of additives. During processing, crystalline sugar and molasses (a by-product used in rum production, for example) are separated, with some of the natural colourings remaining in the crystals. This is what gives the sugar its pleasant colour and a softly caramel aroma.
During the production of organic cane sugar, only one crystallisation takes place, making it a a less refined form of sugar (excluding raw cane sugar).
From a chemical perspective, it is sucrose, as is the case with beet sugar, so its consumption is not recommended in increased quantities for people who need to monitor their sugar intake. Thanks to its natural origin without artificial additives, however, it represents a quality alternative for everyday use.
Application: suitable for sweetening drinks, baking, cooking, and cold cuisine. It has a fuller and more aromatic flavour, which gives dishes a distinctive character. It is particularly recommended for recipes where the flavour of sugar plays an important role, such as creams, meringues or caramel.
Dosage: the same as with classic granulated sugar.
