Tapioca or cassava It is a plant originating from Central and South America, but today it is also widely cultivated in Asia and Africa. The tuber of this plant is primarily used, which is one of the most important sources of carbohydrates in the world, after rice and maize.

Raw cassava root is not suitable for direct consumption, however, after processing, products available in shops are safe to use. It is most commonly used in the form of pearls or powder, but animal feed is also produced from it and thanks to its high starch content, it can also serve as a raw material for the textile and paper industries. Interestingly, glues and alcohol are also made from it, and it also has significant applications in the production of biofuels.

In some countries, the leaves of this plant are also consumed, and they contain a much wider spectrum of nutrients than the tuber itself.

Tapioca starch is used in South America to make an unleavened flatbread. It is also often used in various flour mixes, for example, in combination with seed flours. As it is naturally gluten-free, is also often used in foods intended for people with gluten intolerance.
