Thanks to its high fibre content, it is a suitable choice for people who want to watch their carbohydrate intake or are looking for an alternative to traditional baked goods.

Recommended use – baguettes or rolls
Ingredients
• 125g Szafi Free mix
• 2 g salt
• 10 g freshly squeezed lemon juice
• 185g water
Optional: 3g Szafi Reform fourfold sweetener for preparing hamburger buns.
Procedure:
Thoroughly mix all the ingredients and knead the dough. Shape into 2 baguettes or rolls and make several cuts on the surface with a sharp knife. Bake in a preheated oven at 190°C for approximately 45–48 minutes.
Tip: You can brush the surface with Szafi Free ketchup mixed with water for a nicer colour. Afterwards, you can sprinkle with seeds or a plant-based cheese alternative.
Recipe for bread:
Ingredients
• 200g baguette flour mixture
• 6 g of salt
• 15 g freshly squeezed lemon juice
• 300g lukewarm water
• 2 g oil for greasing before baking
• 4 g bamboo fibre for shaping
Mix the liquid and dry ingredients separately, then combine them and work thoroughly. Without letting the dough rest, shape it into a cylinder approximately 25 cm long on a floured surface. Place it on a baking tray lined with baking paper, brush with oil, and score the surface.
Bake at 190°C using the top and bottom heat setting for approximately 70 minutes (60 minutes may be sufficient in a more powerful oven).
